On this New Year's Day I wish you joy and good cheer for a very Happy New Year!
Vegetable Beef Soup
Here in the southeast we started the first day of the new year with a very cold rainy day. A perfect day to serve up a hot bowl of comfort food. I've shared this recipe in the past but with comfort food on the menu today this soup tops my chart!
Ingredients:
1 lb. Ground Round
Petite Lima Beans
One or Two Green Tomatoes
Okra (I like fresh but frozen if you can't find it)
Small bag of Carrots
Cabbage
I small Bell Pepper

two 14.5 oz cans Beef Broth
1 28oz can crushed Tomatoes
Two large potatoes, cubed
salt and pepper as desired
2 Tablespoons your favorite oil
Water as needed for more or less liquid

Brown one pound of ground round, drain.
Cook limas until tender, drain.
Chop one or two green tomatoes, slice okra.
Slice a small bag of carrots. Chop one small bell pepper and 1/4 head of cabbage.
Add two 14.5 ounce cans beef broth (I use fat free, low sodium)
One 28 ounce can crushed tomatos.
Add all ingredients to stock pot with the exception of crushed tomatoes. Bring to boil and turn on low to medium heat and cook until vegetables are tender. Add crushed tomatoes and continue to cook on low for about ten minutes. Turn off and let sit for half an hour to enjoy the full flavor of this hearty soup.
If you want the Atkins low carb soup just leave out the beans, carrots, and potatoes. Viola! A perfect low carb, low fat meal.
I think soup is one of my favorite meals. This keeps in the refrigerator several days and makes a great lunch.
